Healthy Banana Pancakes: Only Two Ingredients!
Healthy pancakes made from only two ingredients: 1 banana and 2 eggs–yes please.
When I heard about these magical two-ingredient pancakes, I had to make them immediately. I was skeptical about how pancake-like they would turn out, but to my surprise, not only were they delicious and extremely filling, but they look exactly like pancakes–albeit miniature ones.
They do turn out a little mushier and flatter than traditional pancakes, but considering there is no added white flour or sugar, I really didn’t mind. They definitely aren’t lacking in tastiness. I made a batch with a tablespoon of ground flax and another batch with chia seeds too; the seeds act as an extra binder which makes the pancakes hold up a little better during the flipping process–I liked the chia seed batch the best. I topped mine with blueberries and a little almond butter mixed with plain Greek yogurt and a drizzle of honey!
I ended up smearing the almond butter mixture on the pancake, lining up a couple blueberries, rolling the whole thing up, and eating each pancake like a taco with my hands (I’m fancy like that).

Super healthy and easy two ingredient pancakes. Top pancakes with fruit, a little maple syrup, or nut butter of choice! Paleo friendly and gluten-free.
Original Recipe by Rabbit Food for My Bunny Teeth
Servings: 1
Ingredients
2 eggs
1 ripe medium banana
Optional ingredients I added
1 tbsp ground flax or 1 tbsp chia seeds (binds mixture better)
1/4 tsp vanilla
1/8 tsp pumpkin pie spice
My topping of choice
1 Tbsp almond butter mixed with 3 Tbsp Greek plain yogurt and a drizzle of honey
Directions
1. Mash banana with a fork. Beat two eggs and combine with mashed banana. Add in any optional ingredients. Or use a food processor to combine all ingredients and once, process until smooth.
2. Heat griddle over low heat, spray with a non-stick spray or coat with a little olive oil, then pour batter onto griddle in small circles (make sure the pancakes are smaller than the size of your palm or they will be really hard to flip). Flip after edges start to cook and allow the pancakes to cook through.
Nutrition info for pancakes (not including chia or flax): 250 calories, 10 g fat (3 g sat fat), 14 g pro, 28 g carb, 3 g fiber.

Why did my pancakes become more like omelette then pancakes?
It’s probably because the base is eggs. These aren’t super fluffy pancakes like a traditional pancake would be. The eggs make it a little more omelette like, but just sweeter because of the banana!

made this morning with only one extra large egg. Used all the options, slow cooked – had to be careful when turning and I used cooking spray on my griddle. I made 6 silver dollar sized pancakes and used a tsp of natural peanut butter (melted) as the topping. They came out pretty good – I will skip the pumpkin pie spice and just use ginger and cinnamon next time. I will make again.
I should note I threw everything into my little proctor silex chopper and whipped it up there.
I freeze thinly sliced bananas in wax paper to make banana ice cream (with peanut butter) and use this cheap little chopper to whip them up – perfect for single use.
It’s not pancakes, it’s basically a banana omelette. Absolutely disgusting.
This is a great recipe. I’m really not sure why there have been negative comments. I’ve had them two mornings in a row and they have been amazing. The texture is just like a pancake and they have kept me going for hours. They are not only delicious, but really quick to make. These pancakes can be made and ready to eat in the same time it would take to make a couple slices of toast.
So glad you enjoyed them; I do too! Very quick to make with minimal healthy ingredients. I think people just expect them to be exactly like a normal grain-based pancakes, which they won’t ever be. Doesn’t mean they can’t be great though!

Delicious! I added 1/4 tsp baking powder to make them fluffier. It might help those folks who said they didn’t like the texture.

It’s yummy! But if you add 1/3 cup of oats in this recipe it taste just like pancakes cuz of the oats base

I actually made these and used an actual pancake machine and they looked exactly like a pancake and added just a bit of peanut butter on them, my kid who hates eggs had no clue they were not traditional pancakes at all , we will definitely make them again.
It’s a wonder that anyone finds these “disgusting” – there are only two ingredients! Yes, they are essentially banana omelettes but with only eggs and bananas what did people expect?! Anyway, this is a great, simple recipe. I love them after a gym session to replenish energy. Thanks!
I didnt like them the first time that I made them but absolutely loved them the second time! I guess I had to get the idea of real pancakes out of my head. I ate mine with a side of crispy bacon and a small amount of maple syrup. delish!
