Crispy Pizza

 

What if I told you that you could eat a whole 10-inch pizza by yourself, cheese included, and still be healthy? Would I be your new best friend?  I definitely will be after you taste it. Here’s a super crispy pizza that you can eat every week and never feel bad about.

 

The crust happens to be a whole wheat burrito-sized tortilla, which bakes up super crispy in the oven, so there’s no kneading involved or waiting on dough to rise. The whole process of making the pizza takes 15-20 minutes–10 minutes if you prep your chopped veggies in bulk ahead of time and use leftover meat from the night before like I did. I always recommend prepping vegetables and cooking meat in bulk for your weekly menu on Sunday afternoons, and one additional day during the week; you won’t have to pull out the cutting board every night!

 

You’ll never need an excuse to swing by your local greasy pizza restaurant on your way home from work again. Did I mention how amazing it smells coming out of the oven?

{Crispy Steak & Feta Pizza}

This recipe is super customizable, so you can use your favorite meat and veggies to make your favorite pizza that’s just right for you. I love feta because it’s a lower calorie cheese with a tangy flavor.

Serving: 1 pizza

 

Ingredients 

1 whole wheat burrito-sized tortilla (one without hydrogenated oils or added sugar preferably) 

1/4 cup pasta sauce (the no sugar added kind) or tomato paste

2 oz sirloin, cooked

3 tbsp feta cheese

1 Roma tomato, thinly sliced

1/3 cup chopped green pepper

1/3 cup sliced red onion

2 tbsp sliced black olives

1/4 tsp oregeno

 

Directions 

1. For easy steak: heat a skillet over med-high heat and sear steak for 2-4 minutes on both sides, depending on the thickness of your steak. Aim for medium doneness; the steak will get cooked a little in the oven too.

2. Spread pasta sauce over tortilla and top with remaining ingredients, and sprinkle the oregeno over pizza.

3. Bake for 5-6 minutes at 400 F until edges are brown & crispy; slice into 4 pieces.
